An Easy Recipe for Dark Brown Sugar Oatmeal Cookies
Today, I am going to switch it up and give you all one of my favorite cookie recipes! It’s for Dark Brown Sugar Oatmeal cookies! Another thing that you may not know about me is that I love to bake, cook, and try new recipes all of the time! I don’t mean to brag, but…99% of the time my experiments turn out just the way I want (if not better). I originally got this recipe from the Food Network and I have experimented with it a few different ways in the past so, I decided to share! This time it will be the basic version. Anyway, it’s still a Brown Sugar Oatmeal cookie that you have to try!
I absolutely LOVE a good, chewy, oatmeal cookie. I don’t really enjoy oatmeal itself – not that I hate it, but it is not something I eat often at all. However, oatmeal COOKIES…that’s a different story. The thing that sucks is that most oatmeal cookies that I find in bakeries or stores have raisins in them and that right there just ruins it for me! For this recipe, feel free to mix in raisins, nuts, chocolate chips, or whatever else you would like for an extra tasty treat!
Essentially, this is what got me to make oatmeal cookies – with a twist (A.K.A. the brown sugar)! I’ll go ahead and walk you guys through the recipe and I’ll also include some pictures which aren’t the best, but it’ll do for now.
Let’s Bake Some Brown Sugar Oatmeal Cookies!
Note: I do not own a mixer – I mixed and did everything by hand, but if you have a mixer, by all means, use it so you don’t struggle as I did in the beginning!
I first started off with the butter and the dark brown sugar. I combined them until smooth. By “smooth”, I mean like the consistency of icing (more or less). This took me about 5 minutes and it was probably the hardest part of the entire recipe only because I don’t have a mixer.
After you have the butter and brown sugar combined, you want to go ahead and add in your vanilla. I for some reason can never find regular vanilla in Bulgaria (unless it is in powder form and in tiny packets) so the one that I am using apparently has a butter flavor. In any case, it worked out just fine. Go ahead and mix in the vanilla.
I then cracked in 1 egg, mixed everything together, then cracked in another one. Then combined until smooth once more.
In a separate bowl, I added my dry ingredients – it is important to do this separately in order to avoid clumps and a huge mess. The dry ingredients for my Brown Sugar Oatmeal cookies include flour, baking soda, and salt. Once you mix all of that together, you want to add it to the brown sugar and butter.
Next, I added in the flour in thirds and mixed each bit of flour in before adding the rest. This also helps avoid clumping and it can be easier for you to mix it in evenly, especially if you don’t have a mixer.
Once you have mixed in all of the flour, the cookie dough is almost done! Here is where the “oatmeal” comes into play. It is time to add it in. I again chose to do this in parts (2, to be exact). I used regular oat flakes the first time, however, for the second part I used “fine oat flakes” …which is apparently a thing and I would have known if I read or maybe paid attention at the store when I purchased it. In any case, I have made these cookies a couple of times before and I actually liked them better this time with half regular oat flakes and half fine oat flakes – YOUR CALL!
Mix everything together, one last time. Voila! You have your Brown Sugar Oatmeal cookie dough!
At this point, I got my sheet tray, some parchment paper, and a small ice cream scoop. The size that you make the cookies is up to you. I went with small to medium size balls of dough. Choose wisely because the cookies will spread out.
I put the cookies in the oven for exactly 13 minutes at 175°C (350°F). I then took them out to cool for a few minutes on the tray.

Depending on the size of your Brown Sugar Oatmeal cookies, you should be able to get about 25-30 of them from this recipe. The cookies stay soft, chewy, and they are delicious right out of the oven as well as when they are cooled. I enjoy mine with a cup of coffee or tea – depending on the time of day!
The Ingredients for the Brown Sugar Oatmeal Cookies
- 400 grams (2 cups)of packed Dark Brown Sugar
- 227 grams (1 cup) of softened Butter
- 10 ml (2 teaspoons) of Vanilla
- 2 whole Eggs
- 190 grams (1 1/2 cups) of Flour
- 1/2 teaspoon of Baking Soda
- 1/2 teaspoon of Salt
- 300 grams (3 cups) of Oatmeal (Regular Oat Flakes and/or Fine Oat Flakes)
Note: I used pints and ml for my measurements because that’s what I had. I’m no (professional) chef so, I can’t tell you which measurement is used for what – but this worked for me!!
- Preheat oven to 175°C (350°F)
- Bake for 13 minutes or until golden brown
